No, these were not one of Maida’s recipes. The next one in her book is a doozy so I’ve been putting it off. Today I made these muffins. Nice, simple muffins. Did I follow the recipe to a t? I did not. Did I use maple syrup? Yes. Yes, I did. Did I substitute a few other things? Again, yes. And guess what? They turned out so good. How is it when I follow recipes very closely, they don’t turn out, yet when I change out a bunch of things on another recipe, they turn out great? I’m even sifting flour in Maida’s recipes. SIFTING flour. I have never sifted flour in my life. That alone should be enough. How on earth are they not turning out?!

Thank you so much! I’ve been taking them with some help from my little assistants. With good lighting and a neutral background, they’ve been turning out pretty well. Though I’m really missing my white kitchen when it comes picture time. : )
