The Queen Mother’s Cake

Yes, you read that correctly. I just baked THE Queen Mother’s Cake. Which I’m pretty certain makes me royalty.  Just remember I’m still the same person.  I don’t want to be treated any differently.

I’m not certain mine looks good enough to serve to the queen (you know, if the opportunity ever comes up and she drops by for a visit), but it sure tastes good enough.  You’d never know it was flourless, and the chocolate coffee icing is rich and decadent. Friends of Jan Smeterlin (a Polish Pianist who loved to bake), served this cake to the Queen using his recipe. Let’s just say it was a hit, the Queen asked for the recipe, and the rest is history.  Her personal chef now bakes it for her to take wherever she goes.  Maida even corresponded with Her Majesty about the cake.  Wowza!  And if communicating with the Queen wasn’t exciting enough, Maida became a 1997 cover girl when Saveur magazine put the cake on it’s cover!  I have to say I am very surprised to have never heard of Maida Heatter before this baking endeavor.  It sounds like she was quite the happenin’ lady!

Thank you!! It was difficult waiting a day to try it, but it wasn’t finished until last night and the lighting did not allow for a good picture. After that, the Queen’s cake made for one very yummy breakfast! : )
